Six-ingredient Basil Tomato Soup

After bringing this six-ingredient soup to a teachers' function, I had so many requests for the recipe that it was published in the school newsletter. I serve the rich soup in mugs with a Caesar salad and crusty bread.—Sarah Perkins, Southlake, Texas

Ingredients

  • 2 cans (28 ounces each) crushed tomatoes
  • 1 can (14-1/2 ounces) chicken broth
  • 18 to 20 fresh basil leaves, minced
  • 1 teaspoon sugar
  • 1 cup heavy whipping cream
  • 1/2 cup butter

Directions

  • In a large saucepan, bring the tomatoes and broth to a boil. Reduce heat; cover and simmer for 10 minutes. Add basil and sugar. Reduce heat to low; stir in cream and butter. Cook until butter is melted.

    Best tomato basil ever especially if you use excellent quality crushed tomatoes. Add a inch piece of parmesan rind. Cut butter in half. Use half and half. Serve with parmesan or mozzarella on top if you like. So easy. So good.

    First homemade tomato basil soup I ever made and it was fantastic! A bit tart, so I added a touch more sugar. My husband loved it, too! Serving at a girl's lunch at my house in snowy, cold Idaho, with thick 3-cheese grilled sammies and salad.

    It was a cold wintery day here in NY and wanted something warm! Instead of opening a can of same ole tomato soup, I wanted to try something different! My boyfriend who is a huge tomato and tomato soup lover really enjoyed this soup as well as me and the kids.

    All my life I've hated Cream of Tomato soup (I'm in my 60's). Of couse my experience was Campbells made with milk. I've never tried it either because in restaurants it is so high in calories. I grow my own basil and this morning I made this. I used 1/2 c sour cream and 1/2c of heavy cream. I used crushed and diced and then used an immersion blender. Oh my goodness...call me happy. A new addition for the winter months and so quick and easy. THANK YOU! PS I also grow rosemary and thyme, I may be doing a wee bit of experimenting. ;-)

    I halved the recipe, but I should have made the entire amount! It was delicious. I did use less basil, because I didn't have as much on hand as I thought, but still fantastic and easy!

    This soup is super easy and the taste is very good. Made with grilled sandwiches.

    This soup is delicious! I sometimes substitute light cream for the whipping cream but It's delicious either way! Our church has served it at our Lenten Luncheon and everybody raves about it!

    Everyone in my family loves this recipe! Tastes just like I've had in restaurants! I actually cut back on the heavy cream by half and used a half cup milk. It was perfect!
