- 1/3 cup sugar
- 2 tablespoons cornstarch
- 2 cups milk
- 2 egg yolks
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- In a microwave-safe bowl, combine sugar and cornstarch. With a hand mixer, beat in milk and egg yolks until smooth. Microwave on medium for 5 minutes. Beat well with mixer. Microwave on high for 2 minutes; stir. Blend in butter and vanilla. Pour into serving dishes; cool.

I have made this recipe for years. Using whole,skim,almond milk. Using sugar,Splenda or stevia. Using butter or not. Always great! If the pudding isn't thickening after the first round in the microwave add more cornstarch. I have found using skim or almond milk add 1/2 tbsp more cornstarch in the beginning and it thickens fine. If I make chocolate I melt a square of unsweetened chocolate and more sweetener to taste. You could add chocolate chips and no extra sweetener. Add these along with the butter, stir until melted.

I make this pudding all the time. My family loves the custard like taste and texture. It is quick to make and I often double the recipe.
