Roasted Sugar Snap Peas

- 1 package (8 ounces) fresh sugar snap peas, trimmed
- 1 tablespoon chopped shallot
- 2 teaspoons olive oil
- 1/2 teaspoon Italian seasoning
- 1/8 teaspoon salt
- Preheat oven to 400°. Toss together all ingredients; spread in a 15x10x1-in. pan. Roast until peas are crisp-tender, 8-10 minutes, stirring once.

So easy and so good! I used Bermuda onion because it was what I had on hand. Definitely will be making these again!

?Wonderful the first time I made these, then the second time, I added some additional veggies to the mix: sliced radishes, and asparagus tips. Fast and delicious. I hardly ever boil vegetables anymore... roasting is such an easy and delicious alternative. Need a bit more olive oil for the additional veggies as well as a bit more Italian Seasoning. Yum.

My new go to now. Also added 1 whole minced shallot as another reviewer said. Absolutely delicious and easy!

I made this a while back and forgot to review it. This is an easy and delicious recipe. I added a minced whole shallot to the mix. Will make this again.
