Ingredients

  • 1 large tomato, chopped
  • 1 small navel orange, peeled, sectioned and chopped
  • 2 tablespoons minced fresh parsley
  • 2 tablespoons sliced Greek olives
  • 1 teaspoon capers, drained
  • 1 teaspoon red wine vinegar
  • 1 teaspoon olive oil
  • 1/2 teaspoon grated orange zest
  • 1/2 teaspoon pepper
  • 6 medium leeks (white portion only), halved lengthwise, cleaned
  • Crumbled feta cheese

Directions

  1. Combine the first 9 ingredients; set aside. Place trivet insert and 1 cup water in a 6-qt. electric pressure cooker. Set leeks on trivet. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 2 minutes. Quick-release pressure.
  2. Transfer leeks to a serving platter. Spoon tomato mixture on top; sprinkle with cheese.
