Poor Man’s Hash

- 1 tablespoon butter
- 2 cups cubed peeled potatoes
- 5 ounces SPAM luncheon meat, finely chopped
- 3/4 cup 2% milk
- 1 small onion, chopped
- 1 tablespoon minced fresh parsley
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- In a large skillet, melt butter over medium-high heat. Stir in the remaining ingredients. Cook and stir for 10-12 minutes or until browned and potatoes are tender.

I am in my late 60's and I grew up eating this except we never added milk. Now there are so many varieties of Spam. Also fix Spam

Surprise, surprise, this was very good!! I had some mini bell peppers that needed to be used, so chopped up some and added them to the "mess" - delicious with a fried egg on top. Darling husband really enjoyed his breakfast!!

I fried the spam a little before adding the other ingredients so render some of the fat out of it. Otherwise it was good.

It was surprisingly good and I've made it several times. Very economical. Be sure to mince the spam for a more consistent flavor
