In this recipe, a premade pizza crust is topped with scrambled eggs and bacon bits, then covered with cheese. Breakfast pizza is a unique morning treat that’s ready in just 30 minutes.

  • Pizza crust: Our recipe keeps things simple with refrigerated pizza dough from a tube. If you like to make your own pizza dough, you can do that, too.
  • Eggs: It’s just not breakfast without eggs! Soft scrambled eggs are spread over the crust before the other toppings are added.
  • Shredded cheese: A blend of cheddar (sharp or mild) and Monterey jack cheeses melt beautifully together for this breakfast pizza.

Step 1: Prepare the crust

Preheat the oven to 400°F. Unroll the pizza crust, and press it into a 10×15-inch baking pan so that it covers the bottom with a 1/2-inch high edge on all sides. Prick the crust all over with a fork, and brush it with 1 tablespoon oil. Bake for seven to eight minutes, until it’s puffed and lightly browned.

Step 2: Make the eggs

Whisk the eggs with a little water until they’re blended and frothy. Cook the eggs in a skillet in 1 tablespoon oil over medium heat, stirring often, until they’re thick with soft curds.

Editor’s Tip: If you want to add any seasonings to the eggs—salt, pepper or herbs—now’s the time!

Step 3: Assemble the pizza

Spoon the scrambled eggs over the baked pizza crust to make an even layer. Sprinkle bacon bits and cheeses over the top.

Slide the pizza into the oven, and bake for five to seven minutes, until the cheese is melted and gooey. Slice the pie, and it’s ready to serve.

  • Add other toppings: Try this pizza with other savory morning foods, like crumbled breakfast sausage, chopped ham, freshly cooked maple bacon (instead of the bacon bits) or corned beef hash.
  • Go veg: It’s easy to make a vegetarian or vegan breakfast pizza. Skip the bacon, swap the eggs and cheese out for plant-based versions, and add toppings like cubed tofu, sliced mushrooms, diced peppers and spinach.
  • Spice it up: Turn this recipe into a spicy, Mexican-inspired breakfast pizza. Add taco seasoning to the whisked eggs, use spicy chorizo instead of bacon, and add sliced jalapenos to the top before baking. Once the pizza comes out of the oven, top with diced avocado and chopped cilantro.

  • 1 tube (13.8 ounces) refrigerated pizza crust
  • 2 tablespoons olive oil, divided
  • 6 large eggs
  • 2 tablespoons water
  • 1 package (3 ounces) bacon bits
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese

Directions

  1. Preheat oven to 400°. Unroll and press dough onto bottom and 1/2 in. up sides of a greased 15x10x1-in. pan. Prick thoroughly with a fork; brush with 1 tablespoon oil. Bake until lightly browned, 7-8 minutes.
  2. Meanwhile, whisk together eggs and water. In a nonstick skillet, heat remaining 1 tablespoon oil over medium heat. Add eggs; cook and stir just until thickened and no liquid egg remains. Spoon over crust. Sprinkle with bacon bits and cheeses.
  3. Bake until cheese is melted, 5-7 minutes.
