In a blender, combine 1 cup water and mint leaves; cover and process for 1 minute. Strain mixture into a pitcher, discarding mint. Add the lemon juice, honey, lemon peel and remaining water; stir until blended. Cover and refrigerate for at least 2 hours.
Serve in chilled glasses over ice. Garnish with mint sprigs and lemon peel if desired.

I had 1 lime left over from another recipe, so I squeezed it along with the lemons. Great refreshing drink. I used 11 mint leaves and I could barely taste it. Next time I'm, going to increase it to 15.

I loved the taste, but mine looked much darker than the picture. I think this would be great mixed with tea also.
