Had these at a friend's gathering. They looked amazing and tasted good too but didn't ask for the recipe since I didn't know the person - mistake! It took some time to hunt down but here it is. I made it for ourselves to test if I could manage with the tomatoes being so small but like the comments submitted it was finicky but okay. A keeper and going to the next pot luck.

I made this for New Year’s Eve get together with old friends and it was a real hit! They were the only food item completely devoured! They were a little time consuming to make as far as preparing the tomatoes but were easy to stuff and very tasty. I used a 1/8th tsp oblong measuring spoon to spoon out the middle of the tomatoes. It was super easy. Will make again.
