- 1 large onion, chopped
- 2 tablespoons canola oil
- 2 garlic cloves, minced
- 4 large potatoes, peeled and cubed (about 2 pounds)
- 1 pound smoked kielbasa or Polish sausage, halved and sliced
- 1 can (4 ounces) chopped green chiles
- 1 can (15-1/4 ounces) whole kernel corn, drained
- In a large ovenproof skillet over medium heat, cook and stir onion in oil under tender. Add garlic; cook 1 minute longer. Add potatoes. Cook, uncovered, for 20 minutes, stirring occasionally.
- Add kielbasa; cook and stir until meat and potatoes are tender and browned, 10-15 minutes. Stir in chiles and corn; heat through.

I really enjoyed this. I'm always looking for something different than kraut to do with Kielbasa. Followed a couple suggestions in the reviews and added dill weed, a little lemon pepper and pepper jack cheese. I will definitely make this again. Thanks for a super recipe!

This isn't just for camping and has everything in it we like. I do spice it to our tastes and at the end top it with a couple of handfuls of grated pepper Jack cheese, put the lid on just til the cheese melts. This makes enough for the 2 of us to have left overs the next night.

I plan to make it even easier (and much faster) and use frozen diced hash brown potatoes! Can't wait to make it this week. After reading the reviews, I may add a bit of green pepper and some seasoning.

This was just ok. I spent a lot of time chopping the onions and potatoes and then having to constantly stir while cooking so it was really more work than it seemed. Might or might not make again.

This would also be good with a can of black beans and a toss of fresh cilantro at the end . Otherwise I would not add corn. This is ver versatile and can be made to your family likes

My daughter and I do something similar on the grill. Cut up kiebasa, potatoes, add some carrots, onion, seasoning salt and some ice cubes (for moisture). It's done in about 40 minutes or so. No clean-up when done in a foil packet.

My family really likes this. We add a green bell pepper and cream of mushroom soup. It's on the regular dinner rotation now. Thanks for the recipe.

I think I made a wrong turn somewhere. Didn't turn out good at all. I will prolly make something similar but won't follow this recipe.

Yummy recipe no matter what. I definitely "invented" my own version with bell peppers, all cooked on the stove top years ago. But, the suggestion from Arlene Lopez to turn leftovers into breakfast food with a fried egg on top is great! I can't wait to try this "reinvention" of an old time favorite!
