Cucumber Tomato and Green Onion Salad Recipe
- 2 medium tomatoes, sliced and quartered
- 1 large cucumber, peeled and sliced
- 4 green onions, chopped
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/3 cup cider vinegar
- 1 cup water
- In a bowl, combine the tomatoes, cucumber and onions. In a small bowl, combine the sugar, salt and pepper. Whisk in the vinegar and water. Pour over vegetables and toss to coat. Cover and refrigerate for 4 hours or overnight. Serve with a slotted spoon. Yield: 8 servings.

I'm making a similar salad right now... minus the sugar and in place of the vinegar I use ranch dressing. It's a great salad.
At first I thought using so much water would be a bad idea, but I decided to go ahead and just follow the recipe. I LOVED IT!!! The flavor is so tasty (assuming you like vinegar) and I found that I even liked slurping up the juice along with the crunchy parts. I will definitely make this again and again. Thank you so much!
I love this salad. It's perfect for summertime and is a great way to eat up those fresh tomatoes out of the garden.
Just what the doctor ordered! My dear mom used to make something similar to this when I was a child and I've tried repeatedly to replicate it with no luck. Then my brother shared this recipe with me and it's perfect. Enough said.
I Like the ingredients but instead of vinegar I add a small amount of lo-cal.Italian dressing,it is not so tart with a light dressing,actually any light dressing would do,good recipe.
