Cucumber Tomato and Green Onion Salad Recipe
- 2 medium tomatoes, sliced and quartered
- 1 large cucumber, peeled and sliced
- 4 green onions, chopped
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/3 cup cider vinegar
- 1 cup water
- In a bowl, combine the tomatoes, cucumber and onions. In a small bowl, combine the sugar, salt and pepper. Whisk in the vinegar and water. Pour over vegetables and toss to coat. Cover and refrigerate for 4 hours or overnight. Serve with a slotted spoon. Yield: 8 servings.

Just what the doctor ordered! My dear mom used to make something similar to this when I was a child and I've tried repeatedly to replicate it with no luck. Then my brother shared this recipe with me and it's perfect. Enough said.
I Like the ingredients but instead of vinegar I add a small amount of lo-cal.Italian dressing,it is not so tart with a light dressing,actually any light dressing would do,good recipe.
i put this salad together this afternoon and marnated for dinner. i substuted it and added red onions and shredded carrots and
house italian dressing it was even better than vingear and water.
I was searching for a cucumber tomato salad on line and this one came up. I thought I'd give it a try. I didn't have green onions so,I used a sweet onion instead. Very delicious!! I would make again!
This is so good and easy to make, not too strong. My husband asked me to make it much more often this summer with our veggies from the garden. It's very versatile also.
