Lasagna Soup Recipe

Ingredients

  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1 package (7-3/4 ounces) lasagna dinner mix
  • 5 cups water
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 can (7 ounces) whole kernel corn, undrained
  • 2 tablespoons grated Parmesan cheese
  • 1 small zucchini, chopped

Directions

  • In a Dutch oven or soup kettle, cook beef and onion over medium heat until meat is no longer pink; drain. Add contents of the lasagna dinner sauce mix, water, tomatoes, corn and Parmesan cheese; bring to a boil. Reduce heat; cover and simmer for 10 minutes, stirring occasionally.
  • Add the lasagna noodles and zucchini. Cover and simmer for 10 minutes or until noodles are tender. Serve immediately. Yield: 10 servings (2-1/2 quarts).

Nutritional Facts 1 serving (1 cup) equals 175 calories, 5 g fat (2 g saturated fat), 23 mg cholesterol, 671 mg sodium, 21 g carbohydrate, 2 g fiber, 12 g protein.

I have made this so many times! It never lasts long in our house, so I always double it!

I enjoyed this soup. However it does taste like the lasagna hamber helper, so if you like that, then you will like this, but if you do not like "hamburger helper" this is not for you. If I make again, I will add 1 less cup of water. As it was a bit watery. And the zucchini is fine, but you do not have to use it, maybe even try frozen green beans.

We loved this soup...I did do only 3 cups of water and then 2 cups of beef stock to add extra flavor, and added fresh mushrooms when I added the zucchini. Would make this again!

I have made this recipe about 5 times and love it each time! I use different boxed pasta meals to change it up a bit too, also different veggies. It's awesome

this is the best,serve with some garlic bread or breadsticks for dipping....you wont have leftovers it is so yummy ( and yes I use the hamburger helper lasagna)

I like this soup because it's quick and easy and goes great on a cold night. My kids love it and I never have leftovers!

I liked the thought of this recipe so I thought I would give it a try. My husband and I found that it was extremely watery even for a soup. The flavor was just not there. I will not make this dish again.
