It's a winner... I used what I had on hand, so used yellow pepper instead of read, almost 2 pounds of chicken and 1.5 times the chili powder and cumin. Baked it at 425 for 25 minutes and the veggies were nicely caramelized.

I thought these might be too spicy for my kids, but they hardly seemed spicy at all and the kids ate them up!

I used sirloin steak instead of chicken for a steak fajitas version, it was excellent. Will try the chicken next time.

What an easy way to make fajitas. Pop it in the oven and let it bake while you prep the rest of your meal. I used 2 lbs. of chicken and had to bake it for about 35 min. Yum!

Easy and fast to prepare. The whole family loves this recipe served with shredded cheese and sour cream. In the summer we add julienned zucchini.

This recipe is our favorite! It's so quick and easy and has great flavor! My husband and I add reduced fat sour cream and a little sprinkle of cheddar that makes it that much yummier!
