Onion Beef au Jus Recipe
  • Prep: 20 min. Bake: 2-1/2 hours + standing

Ingredients

  • 1 beef rump roast or bottom round roast (4 pounds)
  • 2 tablespoons canola oil
  • 2 large sweet onions, cut into 1/4-inch slices
  • 6 tablespoons butter, softened, divided
  • 5 cups water
  • 1/2 cup reduced-sodium soy sauce
  • 1 envelope onion soup mix
  • 1 garlic clove, minced
  • 1 teaspoon browning sauce, optional
  • 1 loaf (1 pound) French bread
  • 1 cup (4 ounces) shredded Swiss cheese

Directions

  • In a Dutch oven over medium-high heat, brown roast on all sides in oil; drain. In a large skillet, saute onions in 2 tablespoons of butter until tender. Add the water, soy sauce, soup mix, garlic and browning sauce if desired. Pour over roast. Cover and bake at 325° for 2-1/2 hours or until meat is tender.
  • Let stand for 10 minutes before slicing. Return meat to pan juices. Slice bread in half lengthwise; cut into 3-in. sections. Spread remaining butter over bread.
  • Place on a baking sheet. Broil 4-6 in. from the heat for 2-3 minutes or until golden brown. Top with beef and onions; sprinkle with cheese. Broil 4-6 in. from the heat for 1-2 minutes or until cheese is melted. Serve with pan juices. Yield: 12 servings.

This recipe was a huge success. I had to improv somethings, but none the less, IT WAS FABULOUS. I didn't have onion soup mix, so I used vegetable soup mix. I didn't have browning sauce so I used liquid smoke. I didn't have french bread but I used sourdough hoagies. This recipe is like a cross between a philly cheese steak and french dip sandwich in one. Thanks for sharing.

Awesome recipe! I made it with the 2 2-lb roasts I had on hand. Other than that, I made it as-is. Recipe made quite a bit, would recommend at least 2 loaves of french bread.

Forgot to say...I put sliced Provolone on top instead of Swiss cheese. First of all, it was just less messy and so much easier. It was 4 slices per side and 2nd-family isn't crazy about Swiss so don't have it on hand.

Loved it! Made it exactly as it's written and my teen sons and husband loved it. I may add sauteed mushrooms with the onions next time-I think it would sort of be icing on the cake. This will be something that will go on my regualer list. Thanks TOH1

A big hit at home and when I take this to friend's house!!! I never have sweet onions on hand, so I cheat and use the cut onions that come frozen. Delicious!

This seriously is the absolute best recipe for a roast I have ever made or tried! My husband absolutely loves it and requests for it often! It is easy to prepare and has a short list of ingredients so it is budget friendly. This is sure to be a hit with everyone!
