Italian Herb Salad Dressing Recipe
  • Prep: 5 min. + chilling
  • Yield: 10 Servings

Ingredients

  • 3/4 cup olive oil
  • 1/2 cup red wine vinegar
  • 1 tablespoon grated Parmesan or Romano cheese
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon dried oregano
  • Pinch pepper

Directions

  • In a jar with a tight-fitting lid, combine all ingredients; shake well. Refrigerate. Shake well again before serving over greens. Yield: 10 servings.

I'm new to making my own salad dressings, and this was delicious and SO EASY. I question the 10 servings, though. We don't use a lot of dressing, so I halved it, and it just barely dressed two individual salad bowls. Will definitely make again!

I used this to marinate some vegetables that we did on the grill when I discovered I didn't have any store-bought Italian dressing. It worked great!
