Hearty Cheese Tortellini Recipe
  • Prep: 30 min. Cook: 6-1/4 hours

Ingredients

  • 1/2 pound bulk Italian sausage
  • 1/2 pound lean ground beef (90% lean)
  • 1 jar (24 ounces) marinara sauce
  • 1 can (14-1/2 ounces) Italian diced tomatoes
  • 1 cup sliced fresh mushrooms
  • 1 package (9 ounces) refrigerated cheese tortellini
  • 1 cup (4 ounces) shredded part-skim mozzarella cheese

Directions

  • In a small skillet, cook sausage and beef over medium heat until no longer pink; drain. Transfer to a 3-qt. slow cooker. Stir in the marinara sauce, tomatoes and mushrooms. Cover and cook on low for 6-7 hours or until heated through.
  • Prepare tortellini according to package directions; stir into meat mixture. Sprinkle with cheese. Cover and cook for 15 minutes or until cheese is melted. Yield: 6 servings.

Nutritional Facts 1 cup equals 388 calories, 14 g fat (7 g saturated fat), 63 mg cholesterol, 908 mg sodium, 40 g carbohydrate, 3 g fiber, 24 g protein.

This is a favorite at our house. My family was hooked the first time I made it. I actually substitued italian diced tomatoes with tomatoes with green chilies because that is what I had. It actually gave it a nice kicked up spicy flavor.

YUM! My crew really enjoyed this. I did add a couple extra dashes of Italian seasoning and crushed a couple cloves of garlic & thru in. I will definitely make again and maybe throw in a few extra veggies...this should camoflage them nicely from my little picky eaters.

This is a recipe that I will make again for family and friends. My husband really liked the flavor and that it wasn't weighed down with alot of spices. I just used oregano for the seasoning and a little salt and pepper. Fresh Italian bread and it made the meal complete. Yummy!
