It sweetens the morning meal but also serves as a healthful dessert or after-school snack. "Spooned into clear parfait glasses, this yummy treat makes a pretty presentation," says Linda Franceschi of Eldred, New York.

Breakfast Sundaes Recipe

Ingredients

  • 2 cups (16 ounces) fat-free raspberry yogurt or flavored yogurt of your choice
  • 1 cup reduced-fat granola cereal
  • 2 medium firm bananas, sliced
  • 1 can (15 ounces) mandarin oranges, drained

Directions

  • In four parfait glasses or bowls, layer 2 tablespoons each of yogurt, granola, bananas and oranges. Repeat layers. Serve immediately. Yield: 4 servings.

Nutritional Facts 1 serving equals 266 calories, 2 g fat (trace saturated fat), 3 mg cholesterol, 130 mg sodium, 57 g carbohydrate, 6 g fiber, 9 g protein.

Banana Basics

Look for plump bananas that are evenly yellow-colored. Green bananas are under-ripe, while a flecking of brown flecks indicates ripeness. If bananas are too green, place in a paper bag until ripe. Adding an apple to the bag will speed the process. Store ripe bananas at room temperature. To prevent bruises, a banana hook or hanger is a great inexpensive investment. For longer storage, you can place ripe bananas in a tightly sealed plastic bag and refrigerate. The peel will become brown but the flesh will remain unchanged. One pound of bananas equals about 3 medium or 1-1/3 cups mashed.
