Pumpkin and Chicken Sausage Hash

I used the butternut squash substitution in the recipe and topped it with a fried egg like the recipe description suggests. What a healthy, filling fall breakfast!
A bumper crop of winter squash led me to this gem of a recipe. It screams fall and winter with a lovely harmony of sweet and savory. I used butternut squash roasted in advance and roasted mushrooms I had in the freezer. Added fresh basil chiffonade at the end.. Delish!
