Parmesan Herbed Noodles

Looking for a quick, tasty side dish that goes well with all kinds of meats? Try my recipe for tender noodles. For a colorful variation, sometimes I add slightly cooked red and green peppers and a quarter cup of peas. —Denise Elder, Hanover, Ontario Elder

Ingredients

  • 1-1/2 cups uncooked wide egg noodles
  • 2 tablespoons shredded Parmesan cheese
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 teaspoons minced fresh basil or 1/2 teaspoon dried basil
  • 1/2 teaspoon minced fresh thyme or 1/8 teaspoon dried thyme
  • 1 garlic clove, minced
  • 1/4 teaspoon salt

Directions

  • In a small saucepan, cook noodles according to package directions; drain. Add the remaining ingredients and toss to coat.

    I cannot say enough about this fabulous dish that I served as a side with Hungarian Goulash. We often have buttered, s & p egg noodles as a side dish, and I always loved it. This recipe takes them to a whole other level. I will be making them like this from now on. Hubby who was not as big of a fan of egg noodles as me, raved over it.

    I really liked the flavors in this recipe. I substituted garlic powder for the clove of garlic since I wanted the garlic to be more subtle. When I make it again, I will use a little less olive oil and add more of the parmesan.

    I needed a side dish to take to a friend. There are only two of them, and I was unsure if food likes and dislikes. This was perfect. Great flavor, and they asked for the recipe to make again ! Simple, and I had everything on hand.

    I'm not sure if I did something wrong or not (I double and triple checked the ingredients!), but oh my goodness it was soooo oily! The butter AND the oil was just way too much! I wound up adding in some grated parmesan and additional shredded cheese to absorb some of the oil and that helped a bit. Next time I'm going to cut both the oil and butter in half for the same amount of pasta. The herbs and salt seemed to be at a good amount. The shredded cheese I used was swiss. Despite the large amount of grease, we both agreed that it was yummy. With the change in grease, this should become a 5-star recipe.

    Very tasty. Added 1/2 small onion diced, 1/2 small zucchini, diced and 1/4 cup of peas. Saut?ed all with garlic, added spices and 1/4 cup of whipping cream. I added cooked rotini noodles and the Parmesan, and mixed. Hubby and mom in law loved it and they are not pasta enthusiasts. Thank you, it's saved.

    This was wonderful! Used 250g pasta and increased sauce ingredients to 3x original amounts (except salt). Didn't change anything - perfect recipe. My family scored this 10/10! Served this alongside a chicken casserole. Thanks for a fantastic recipe. Will be a definite keeper in this house!
