Was afraid to try it with the peel on but it came out great. I made this last night and this morning there are only five left and I am the only one here. I am making it again, right now, for my family and for my neighbors. Will make double. The only thing different I did was add a bit of flax seed to the dry ingredients. The muffins were still moist and delicious. This recipe is a keeper and so easy to make.
I have to admit I was pretty skeptical before making these when I saw that the recipe included whole oranges, but I decided to go ahead and double the recipe to make two batches for some family members. Had one to test out the taste and it was delicious! Highly recommend this recipe especially if you're looking to use up an orange or two.
