- 1 cup all-purpose flour
- 1 cup sugar
- 1 cup hot water
- 1/2 cup baking cocoa
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 egg
- 1/4 cup butter, melted
- Confectioners' sugar
- In a bowl, combine the first six ingredients. Add egg and butter; mix well. Pour into a greased 8-in. square baking pan. Bake at 350° for 30-35 minutes or until cake tests done. Cool. Dust with confectioners' sugar. Yield: 9 servings.

"This recipe is wonderful! I made it last night for a Valentine's treat for my family. It's not to sweet so its great if you want to add frosting, but I like it just the way it is. I did add a little bit of salt, although the recipe doesn't call for any. My mom, who is not a big cake fan, loved it and asked for the recipe. Absolutely a keeper and will be making again. "This cake is great.l I used non-gluten flour, and I used coconut sugar instead of white sugar. This cake took the substitutions well. The cake was delicious. The 8-inch square pan is just the right size of us. I made a frosting of butter, peanut butter, vanilla and coconut sugar. If you put coconut sugar through a blender, it will have a consistency like that of confectioners sugar. Everyone loved this cake."
