Chicken & Dumpling Casserole

- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/4 cup butter, cubed
- 2 garlic cloves, minced
- 1/2 cup all-purpose flour
- 2 teaspoons sugar
- 1 teaspoon salt
- 1 teaspoon dried basil
- 1/2 teaspoon pepper
- 4 cups chicken broth
- 1 package (10 ounces) frozen green peas
- 4 cups cubed cooked chicken
- 2 cups biscuit/baking mix
- 2 teaspoons dried basil
- 2/3 cup 2% milk
- Preheat oven to 350°. In a large saucepan, saute onion and celery in butter until tender. Add garlic; cook 1 minute longer. Stir in flour, sugar, salt, basil and pepper until blended. Gradually add broth; bring to a boil. Cook and stir 1 minute or until thickened; reduce heat. Add peas and cook 5 minutes, stirring constantly. Stir in chicken. Pour into a greased 13x9-in. baking dish.
- For dumplings, in a small bowl, combine baking mix and basil. Stir in milk with a fork until moistened. Drop by tablespoonfuls into mounds over chicken mixture.
- Bake, uncovered, 30 minutes. Cover and bake 10 minutes longer or until a toothpick inserted in a dumpling comes out clean.

I really enjoyed the classic flavor of this dish. The basil is a wonderful touch in the dumplings giving an otherwise potentially bland product a nice flavor. Comfort food at its best.

This is really good but a little much on the basil so next time will cit that a little. We love veggies so I used mixed veggies. My picky 3 year old grandson loved this!!

I had to make some adjustments for what I had on hand, but the whole family really enjoyed this casserole. I used a powder brown gravy mix and made 3 cups of gravy instead of using the chicken broth, flour and seasonings. I also used a 12 oz. package of peas and carrots. Will definitely make again.

jasaliby, since you seem so concerned with saturated fat, I got some news for ya... there's more fat in thighs than in breasts. Whatever the case, this is a wonderful recipe as-is.

I originally tried this recipe years ago when it first appeared in the magazine. I am so happy to have found it again. My dad always loved it.

I thought this was a great recipe. My boys loved it! It was very easy and inexpensive too. One more thought, can we comment on whether we like or disliked the recipe? The bashing between people that leave comments aren't necessary. Cooking is a passion for me not an intense competition. I appreciate others reviews, they are helpful in so many ways.

While I will agree that the sodium content if high in this recipe, that's very easy to fix. But, really, jasaliby, it must be wonderful to be you and NEVER be short on time so you use mixes sometimes! I hate when people tear everything down because they are just SO much better than the rest of us! I thought this recipe was great! I did use low-sodium broth and left out the extra salt. Also, added some carrots and left the basil out of the dumplings. Otherwise, followed the recipe and found it quite tasty. For people who are just learning to cook or those who need dinner quick, this is a great recipe. And I don't eat this kind of stuff everyday!
