Ingredients

  • 4 pounds pork baby back ribs, cut into 2-rib portions
  • 1 medium onion, chopped
  • 1/2 cup ketchup
  • 1/4 cup packed brown sugar
  • 1/4 cup cider vinegar
  • 1/4 cup tomato paste or tomato sauce
  • 2 tablespoons paprika
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon prepared mustard
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Directions

  1. Place ribs in a 5-qt. slow cooker. In a small bowl, combine the onion, ketchup, brown sugar, vinegar, tomato paste, paprika, Worcestershire, mustard, salt and pepper; pour over ribs. Cover and cook on low for 5-6 hours or until meat is tender.
  2. Remove ribs to a serving platter; keep warm. Skim fat from cooking juices; transfer juices to a small saucepan. Bring to a boil.
  3. Combine cornstarch and water until smooth. Gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with ribs. Yield: 4 servings.

Not real bbq ribs to my mind. The sauce was blah and I threw it into the garbage. Have the ribs marinating in a rib sauce to hopefully enjoy them. No deep flavor. Rather like the difference between honest to goodness from scratch mac and cheese vs. a box with pasta and some cheese product. Back to dry rubs and wet mopping.

Against my better judgement I tried these. This is just not a good method for ribs. Back to the smoker it is for me. Ribs should never be "fall off the bone". Perfect ribs need a little tug to detach from the bone. I had to fish the bones from the bottom of the crockpot.

How easy and delicious. I didn't even want to go to the 'trouble' of grilling my ribs today, so I used this recipe. I had everything I needed in the cupboard and refrigerator - great! After 6 hours in the slow cooker, I didn't even need to thicken the sauce with the cornstarch and water - it thickened itself up just fine. I used a liner in my slow cooker to make the clean-up easy too.
