Ingredients

  • 3 pounds fresh okra, whole
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1-1/2 teaspoons smoked paprika
  • 1/4 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper

Nutritional Facts

2/3 cup: 57 calories, 4g fat (1g saturated fat), 0 cholesterol, 155mg sodium, 6g carbohydrate (3g sugars, 3g fiber), 2g protein. Diabetic Exchanges: 1 vegetable, 1/2 fat.

Directions

  1. Preheat oven to 400°. Toss together all ingredients. Arrange in a 15x10x1-in. baking pan; roast until okra is tender and lightly browned, 30-35 minutes. Yield: 12 servings.
