  • 2 tablespoons brown sugar
  • 2 tablespoons butter
  • 1 tablespoon lemon juice
  • 2 teaspoons soy sauce
  • 1 teaspoon minced garlic
  • 1/2 teaspoon pepper
  • 4 halibut steaks (5 ounces each)

1 halibut steak: 236 calories, 9g fat (4g saturated fat), 60mg cholesterol, 273mg sodium, 7g carbohydrate (7g sugars, 0 fiber), 30g protein. Diabetic Exchanges: 4 lean meat, 1-1/2 fat, 1/2 starch.


  1. In a small saucepan, combine the first six ingredients. Cook and stir until butter is melted. Remove from the heat; set aside.
  2. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill halibut, covered, over medium heat or broil 4 in. from the heat for 4-5 minutes on each side or until fish flakes easily with a fork, basting frequently with butter mixture. Yield: 4 servings.

"Halibut is one of my favorite fish to cook. This was a very expensive waste of a perfectly good piece of fish. It really clashed with the flavor of the fish. I was really surprised as the marinade was good to the taste. The halibut with the mustard dill sauce was by far a better pairing of flavors."

"This was so delicious. I grilled fresh Alaskan halibut using a stainless steel grill pan on our grill grate. Started grilling on fleshy side for 5 min, then flipped to finish on the skin side. Family enjoyed it so much, just like eating in a fine seafood restaurant!"
