  • 6 cups fresh broccoli florets
  • 1 cup canola oil
  • 1 cup cider vinegar
  • 2 tablespoons snipped fresh dill
  • 2 teaspoons sugar
  • 1 teaspoon garlic salt
  • 1 teaspoon salt

1 serving: 79 calories, 7g fat (1g saturated fat), 0 cholesterol, 119mg sodium, 3g carbohydrate (0 sugars, 2g fiber), 2g protein. Diabetic Exchanges: 1-1/2 fat, 1 vegetable.


  1. Place broccoli in a large resealable plastic bag. Whisk together remaining ingredients; add to broccoli. Seal bag and turn to coat; refrigerate 4 hours or overnight.
  2. To serve, drain broccoli, discarding marinade. Yield: 8 servings.

"What a wonderful recipe for a summer picnic!! Very refreshing ..... and quick and easy to make!! I added a little more sugar when I made it as well as some finely diced red onion (for the color). Five stars for sure!"
