Cranberry Feta Pinwheels Recipe

Ingredients

  • 1 carton (8 ounces) whipped cream cheese, softened
  • 1 cup (8 ounces) crumbled feta cheese
  • 1/4 cup chopped green onions
  • 1 package (5 ounces) dried cranberries
  • 4 flour tortillas (10 inches)

Directions

  • In a small bowl, combine the cream cheese, feta cheese and onions. Stir in cranberries. Spread about 1/2 cup mixture over each tortilla and roll up tightly. Wrap with plastic wrap and refrigerate for at least 1 hour. Cut each roll-up into 10 slices. Yield: 40 appetizers.

Nutritional Analysis: One serving (two pinwheels prepared with reduced-fat cream cheese) equals 97 calories, 4 g fat (2 g saturated fat), 12 mg cholesterol, 183 mg sodium, 13 g carbohydrate, 1 g fiber, 2 g protein. Diabetic Exchanges: 1 starch, 1/2 fat.

The History of Feta

FETA is a white, salty, semi-firm cheese. Traditionally it was made from sheep or goat's milk but is now also made with cow's milk. After feta is formed in a special mold, it's sliced into large pieces, salted and soaked in brine. Although feta cheese is mostly associated with Greek cooking, "feta" comes from the Italian word "fette", meaning slice of food.

This is a huge hit whenever I make it and I get many requests for the recipe so now I always have some copies of the recipe with me when I take it to potlucks. I have substitued cottage cheese for feta on a couple of occasions and everyone still gobbles them up. I probably double the green onions - I like the flavour as well as the extra colour. This is in with the favourites!!!

I love this recipe. In the fall, I make it with sundried tomato tortillas and use diced up dried apricots in place of the cranberry--gives it a nice, harvesty color scheme!

These didn't taste too cranberry-ish, and were a lovely summer afternoon dish in the backyard. Easy to make and to eat when sitting with friends. Even the guys loved them!
