White Chocolate Fudge Cake

"This sweet cake, with its thick frosting and rich chocolate layer, is a big hit at office potlucks," writes Denise VonStein of Shiloh, Ohio. "I have one co-worker who tells everyone it's awful so he can have it all to himself!"

  • 1 package white cake mix (regular size)
  • 1-1/4 cups water
  • 3 egg whites
  • 1/3 cup canola oil
  • 1 teaspoon vanilla extract
  • 3 ounces white baking chocolate, melted
  • 3/4 cup semisweet chocolate chips
  • 2 tablespoons butter
  • 1 can (16 ounces) vanilla frosting
  • 3 ounces white baking chocolate, melted
  • 1 teaspoon vanilla extract
  • 1 carton (8 ounces) frozen whipped topping, thawed


  • In a large bowl, combine the cake mix, water, egg whites, oil and vanilla. Beat on low for 30 seconds. Beat on medium for 2 minutes. Stir in white chocolate.
  • Pour into a greased 13x9-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes.
  • Meanwhile, in a microwave, melt chocolate chips and butter; stir until smooth. Carefully spread over warm cake. Cool completely.
  • In a small bowl, beat frosting until fluffy; beat in white chocolate and vanilla until smooth. Fold in whipped topping; frost cake. Store in the refrigerator.

    The cake was very tasty, but I had trouble with the chocolate fudge layer. I melted it in the microwave, but could not get it to spread out all the way to cover the cake. So I made a second batch and melted it on the stove. In the end, the fudge layer was very thick and after refrigerating for awhile was very hard to cut through. Maybe next time not leave the cake to sit for 5 minutes and put the chocolate on the cake right out of the oven.

    I am having trouble getting the semi-sweet chocolate chips and butter the right consistency so that they don't tear up the cake. I let cake sit 5 minutes or longer as advised. Suggestions please.

    Very delicious cake, but I tried to make it in a layer cake and did not work.My chocolate layer was like a chocolate shell, not sure what I did wrong. Will make again I may have to tweak the chocolate fudge.

    WOW! Was this ever a hit at my house. My daughter and her two sons say they don't like white chocolate, so being the type of grandma who wants the kids to try new tastes, I didn't tell them there was any white chocolate in the cake or in the topping. The children ate with gusto and sang my praises about this being the best cake ever! When my daughter tried it, she stopped eating long enough to say,"Mom, this cake is the Bomb! What's in it?" Well I couldn't lie to her, so I told her, and she asked for a piece to take home.

    Fabulous cake. I don't know if I loved the cake or the fudge or the icing the best. Nirvana!I do not like store bought icing (too many trans fats) - I am going to experiment with the white chocolate icing next time.
