Sweet Chili & Orange Chicken
My husband loves this simple sweet chili chicken dish so much he often requests it when he comes home from deployment. The sweet chili sauce adds just the right amount of heat to the bright, citrusy sauce. —Jessica Eastman, Bremerton, Washington

We loved this! I doubled the sauce and added thinly sliced red pepper to the chicken. Then I heated a pouch of stir fry veggies (carrots, broccoli, snow peas and water chestnuts) and added it all to the sauce. Served with rice it was a complete and delicious meal for my hubby and me. I meant to try and freeze the leftovers, but when I looked again, my husband was making yummy sounds and scraping the rest of the bowl onto his plate! Oh well, guess I'll have to make double everything next time!
Great as is but I always like to add veggies so I think some matchstick carrots and mushrooms will be added next time. So simple and tasty. Loved it.

This was absolutely delicious and is the perfect substitute for take-out orange chicken! It's such a simple list of ingredients but the flavor is huge. The only change I made was to use boneless, skinless chicken thighs because I had them on-hand. The next time I make this I will be adding some frozen stirfry veggies during the last few minutes of simmering just to boost the nutrition (and, let's be honest, make it feel more like a restaurant fake-out!).
This is a keeper! So easy & a nice twist of flavors.
