Ingredients

  • 1/3 cup minced fresh cilantro
  • 1 jalapeno pepper, seeded and minced
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1-1/2 teaspoons minced fresh gingerroot
  • 1-1/2 teaspoons grated lime zest
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1-1/2 pounds chicken tenderloins

Directions

  1. Preheat oven to 375°. In a large bowl, mix the first nine ingredients. Add chicken; toss to coat. Transfer to a greased 15x10x1-in. baking pan. Bake, uncovered, 20-25 minutes or until chicken is no longer pink.
