Everyone loved this cake.
Everyone loved this cake, and it’s great if you need dessert for a crowd. This cake only took 15 minutes to bake, and no wait needed to ice it. The icing is amazing topped with pecans, reminds me of my grandmother’s fudge. We wanted to make 24 servings so we made 1.25 recipe using 3 leg. eggs and it fit perfectly in a 18 by 11 inch pan. Definitely a new favorite!!
I remember this recipe from 50 years ago. Mom was a home-ec teacher & used the recipe in her school kitchens. This time, I used pecans instead of walnuts, & the liquid from a 16 oz jar of maraschino cherries in place of milk in the batter. I chopped the cherries & added them to the batter. I felt 2 C of powdered sugar wasn't enough - the frosting was too runny, so I used 3 C of powdered sugar, and 1/2 C cocoa in the frosting. Next time - less milk in the frosting also.
Growing up, this was the cake my mom made for all occasions. Easy, yummy, fast, and could satisfy a crowd. Putting the frosting on while hot makes it soak into the cake for extra yummyness. Haven't tried it with the walnuts, though that sounds good, too.
Good cake. I remember making it years ago with some added cinnamon. Two cups powdered sugar was not enough for the frosting. Four cups plus more would be better, too runny.
Nice moist cake. I used 1/3 whole wheat flour, used only about one and a half cups of sugar (partly brown), and added about a teaspoon of instant coffee granules and more cocoa powder to enhance the chocolate flavour. I could not tell there was whole wheat flour in it. It was still sweet enough, and the flavour was very good.I did not make the icing, but sprinkled on some mini M&M's. That didn't work out, they sank down into the cake. Live & learn, right?Great recipe, in terms of tast, texture, and nutrition (especially with WW flour and reduced amount of sugar). Great cake, moist and delicious ! everyone loved it , I followed the directions to the letter,will be making it again for my daughters birthday!
Really great cake, I made whipped cream icing instead of the one directed. My question is the cake says serves 16-20, but the natritional facts dont say how many servings that is calculated on.
