- 1/2 cup butter or margarine, softened
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1-1/2 cups all-purpose flour
- 1/2 cup baking cocoa
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup sour milk*
- 1/2 cup hot water
- Frosting of your choice
- In a mixing bowl, cream butter and sugar. Add egg and vanilla. Combine dry ingredients; add to the creamed mixture alternately with milk and water. Mix well. Fill paper-lined muffin cups two-thirds full. Bake at 375° for 12-15 minutes or until a toothpick comes out clean. Cool for 10 minutes; remove from pan to a wire rack to cool completely. Frost cupcakes. Yield: 1 dozen.
