Makes10 servings (3/4 cup each)
- 1 cup apricot or peach yogurt
- 1 package (3 ounces) apricot gelatin
- 1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
- 1 package (10-1/2 ounces) miniature marshmallows
- 3 cups cubed peeled fresh apricots
- In a large bowl, add yogurt to gelatin; stir 2 minutes to completely dissolve. Gently stir in whipped topping, then marshmallows and apricots. Refrigerate until firm, at least 4 hours.
Nutrition Facts3/4 cup: 225 calories, 3g fat (3g saturated fat), 1mg cholesterol, 57mg sodium, 44g carbohydrate (36g sugars, 1g fiber), 3g protein.

I made this recipe for a ladies luncheon, and it was a big hit. I did not alter it at all.

I made this delicious recipe but with changes. No peach or apricot jello to be found so used orange. Also used peach yogurt since no apricot to be found. Did use 5 fresh apricots. This is a winner all around. Both hubby and I loved it and will definitely make it again. Volunteer Field Editor

I just made this recipe with a few minor changes. I used vanilla lowfat yogurt instead of peach or apricot because that's what I had on hand. I used sugar free peach gelatin, sugar free frozen whipped topping and a 15 ounce can of halved, unpeeled apricot in light syrup (drained) and chopped. The finished "fluff" was tasty, light and not too sweet. A wonderful dessert to make for the hot summer days we have been having. Five stars for sure!

I've made this recipe several times over the past few weeks. I have used different gelatin and yogurt flavors. It is delicious however you make it.

I made this recipe today using 3-oz. peach gelatin since I did not have apricot gelatin! I did use 2 5.3-oz. cartons of peach yogurt and I left the apricots I'd used unpeeled! (They'd gotten ripe!) I'd looked for reduced-fat whipped topping, but didn't find it in my supermarket so I used fat-free whipped topping! (This is a delicious recipe!

This is an excellent summer salad and so many different flavors can be used! A personal favorite if mandarin orange and pineapple. I also love to add in 8oz. cottage cheese.

This is a great ambrosia recipe. To make it a healthier dish (so I could enjoy it more often guilt free!) I used sugar free gelatin subbed a small can of pineapple tidbits for the marshmallows. A sprinkle of unsweetened shredded coconut really made it pop.

I have made this using strawberries, strawberry yogurt and strawberry gelatin. I also use regular whipped topping instead of reduced fat. It makes a fruity, light salad or dessert. Next time I will use peaches or nectarines.
