Spanish Rice Recipe
- 1/4 cup butter, cubed
- 2 cups uncooked Minute® White Rice
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1 cup boiling water
- 2 beef bouillon cubes
- 1 medium onion, chopped
- 1 garlic clove, minced
- 1 bay leaf
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/4 teaspoon pepper
- In a saucepan over medium heat, melt butter. Add rice and stir until browned. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer 10-15 minutes or until the liquid is absorbed and rice is tender. Remove bay leaf before serving. Yield: 4-6 servings.

My family didn't care for this recipe. No flavor.
I was looking forward to making this, and it was quite easy. Wasn't yummy at all. No flavor. Need to add some sauce, to get some flavor.
I followed the recipe but sauteed the chopped onion and garlic together with the rice before adding the other ingredients. I also threw everything into a rice cooker so I didn't have to make sure it doesn't overcook. Turned out perfectly! Delicious!
Very easy and yummy. I added some cumin and chili powder for more flavor since I didn't have broth. Thanks!
Delish! I sautéed chopped onion and a chopped sweet pepper along with the rice. Also used a can of diced tomatoes with jalapeño to add a bit of zip. Finally, I added sliced, fully cooked chorizo sausage at the very end to make this a complete meal. Dinner was a BIG hit!
