Festive Stuffed Dates Recipe

Four ingredients are all you need for these delightful change-of-pace treats sent by Cincinnati, Ohio's Diana Debruyn. Just 1/2 cup dates contains more potassium than a medium banana.

Ingredients

  • 3 ounces reduced-fat cream cheese
  • 1/4 cup confectioners' sugar
  • 2 teaspoons grated orange peel
  • 30 pitted dates

Nutritional Facts

3 stuffed dates equals 102 calories, 2 g fat (1 g saturated fat), 6 mg cholesterol, 37 mg sodium, 22 g carbohydrate, 2 g fiber, 1 g protein. Diabetic Exchanges: 1 fruit, 1/2 fat.

Directions

  1. In a small bowl, beat the cream cheese, confectioners' sugar and orange peel until blended.
  2. Carefully make a slit in the center of each date; fill with cream cheese mixture. Cover and refrigerate for at least 1 hour before serving. Yield: 10 servings.
