- 12 thin slices deli roast beef
- 6 slices process American cheese, quartered
- 12 eggs
- Press one slice of beef onto the bottom and up the sides of each greased muffin cup, forming a shell. Arrange two cheese pieces in each shell. Break one egg into each cup.
- Bake, uncovered, at 350° for 20-25 minutes or until eggs are completely set. Yield: 6 servings (2 each).

"SUPER easy and delish! I used ham instead of roast beef and sprinkled the tops with some kosher salt and cracked pepper. These would be great on a brunch buffet. I baked mine on convection for about 20 minutes until they were hard set. Will try baking conventional next time for about 15 minutes for a softer yolk. Everyone loved them!! Thanks for such an easy and versatile recipe!"
"I think a great variation of this would be use thin sliced ham then add a cooked bacon slice rounded on Inside add then Mexican shred Sargento cheese then scrambled egg whites mixed with red and green peppers and onion cook til done then add pico on top of each w lil sprinkle of parsley"
