Ingredients

  • 1 cup mayonnaise
  • 1/4 cup sugar
  • 1/4 cup white vinegar
  • 1/4 teaspoon salt
  • 4 cups sliced cucumbers

Nutritional Facts

1 serving (3/4 cup) equals 231 calories, 22 g fat (3 g saturated fat), 10 mg cholesterol, 225 mg sodium, 8 g carbohydrate, trace fiber, trace protein.

Directions

  1. In a large bowl, combine the mayonnaise, sugar, vinegar and salt. Add cucumbers; toss to coat. Cover and refrigerate for 2 hours. Yield: 6-8 servings.

"Quick and easy to prepare - nice fresh taste! Only disappointment is how runny the sauce gets (likely due to the high water content of the cukes). Still, will definitely prepare again!!"

"I am not a mayonnaise person, so in place of the mayonnaise, I'll use either nonfat plain yogurt or light sour cream or Ranch dressing. I used 2 Tbsp. sugar, 2 Tbsp. CIDER vinegar, 1/4 tsp. pepper, 1 tsp. salt, 1 thinly sliced yellow or white onion and 4 cups thinly sliced unpeeled cucumbers. This adaptation made a verytasty cucumber salad!
