My husband loves this casserole…but it never lasts too long! Packed with black beans, cheese, tomatoes and Southwest flavor, it's an impressive-looking entree that's as simple as it is simply delicious! —Marsha Wills, Homosassa, Florida

I really thought this was going to be better based on all the other reviews. Maybe it was the kind of black beans I used or the type of Italian dressing, but my family didn't love it. I may try this one again just because I love anything with tomatoes or cilantro.

I've made this twice now, and will be making it again and again! I use corn flour tortillas for a more authentic enchilada flavor and double the cheese. The contrast of the cool lettuce, tomato, and cilantro topping is fantastic. Be sure to use a very sharp knife to cut the casserole, as the bottom layer of tortillas can be a bit of a challenge to cut neatly.

Fantastic. Easy to make, a little messy, but the end result is tasty and leftovers were gobbled up just as quickly.

My husband is pretty picky but said that he would want me to make it again. I used 1/2 pepperjack cheese and 1/2 med salsa, 1/2 mild. It was terrific. Easy and delicious!

I left out the beef and used straight beans. It made a great meatless Monday meal!
