Apple Streusel Muffins Recipe
  • Prep: 20 min. Bake: 15 min. + cooling

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup butter, melted
  • 1-1/4 teaspoons vanilla extract
  • 1-1/2 cups chopped peeled tart apples
  • STREUSEL TOPPING:
  • 1/3 cup packed brown sugar
  • 1 tablespoon all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon cold butter
  • GLAZE:
  • 1-1/2 cups confectioners' sugar
  • 1 to 2 tablespoons milk
  • 1 teaspoon butter, melted
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon salt

Directions

  • In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. In another bowl, combine the eggs, butter and vanilla; stir into dry ingredients just until moistened (batter will be stiff). Fold in apples.
  • Fill greased or paper-lined muffin cups three-fourths full. In a small bowl, combine the brown sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over batter.
  • Bake at 375° for 15-20 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack to cool completely. Combine glaze ingredients; drizzle over muffins. Serve warm. Yield: 1 dozen.

Nutritional Facts 1 serving (1 each) equals 324 calories, 10 g fat (6 g saturated fat), 59 mg cholesterol, 313 mg sodium, 56 g carbohydrate, 1 g fiber, 3 g protein.

I just pulled the out of the oven! They smelled wonderful while baking and tasted even better! I did not use the glaze because I wanted to freeze some of them. I would love to try the glaze next time I make these. My 5 year old picky daughter ate 2 in one sitting! They are very moist and I did not even have to use butter!

This is just about the best Apple Streusel muffin recipe I've ever made. I make these quite often for home and for bake sales at church. Everyone loves them!

These are absolutely delicious. The only change I made was to make a bit more of the topping....I like lots of topping! Who doesn't?!! Make these...you won't be disappointed!

Just finished this recipe and Oh...My...Lord! First, the scent it leaves throughout my house is heavenly. When I tasted it, I couldn't believe how moist it was! Seriously, it tasted bakery-bought. And it wasn't over sweet, it was just right! (I made it without the glaze topping and in a regular cake pan.) I will be making this recipe again; in fact, it may be my annual Christmas cake! Five stars are not enough!

They're awesome! I doubled the recipes andI had to add 2 tsp ground cinnamon and 1 tsp of ground nutmeg in the batter. They're also great for breakfast on the go... and they are also good for snacks as well!! I will make some more soon!! Thanks!!

I made this into a bread instead of muffins and I added 1 tsp. of cinnamon into the batter...and cooked for 50 minutes. The loaf was gone in a couple hours because no one could get enough! I'm definitely making this again soon!

we love these...i leave off the glaze and i still think they are plenty rich and yummy. They freeze really well also!
