As a child, shepherd's pie was one of my favorites. But now, having cut white potatoes out of our diet, I experimented with sweet potatoes in this dish for two. The result is different, but just as yummy! —Tanya Marcketti, Golden, Colorado

Chopped Onion SubstituteWhen there’s no time to chop onions, onion powder is one option. Substitute 1 tablespoon of onion powder for one medium chopped onion. For the best onion flavor, use frozen chopped onions or dried minced onion (found in the spice aisle). One tablespoon of dried minced onion equals 1/4 cup minced raw onion.

Doubled the recipe so I could use up my leftover White & Sweet Potato Mash Potatoes. (So I omited the potato step etc). I only had @ 6 oz tomato paste on hand so I used that and added some water & ketchup to the onion/beef. Used 8 oz. frozen corn & 8 oz. peas. Also around the edge I created a biscuit crust w/ Biscuit Complete (1 cup mix, 1/2 cup milk and 2 TBsp. butter melted). Yum~

This dish was excellent. I needed to feed more than 2, so I incresed the amounts to: 2 sweet potatoes, 1 lb ground round, 1/2c. onion, 16 oz tomato sauce, 1/4 tsp each of cinnamon, allspice and nutmeg. Only used 1 can corn, and added 1 can green beans. Doubled the amounts of butter, salt and pepper for potatoes since I used 2 potatoes. Will also try adding peas next time. Very yummy!!!!!

This was wonderful. What I did different was to use ground turket in place of the beef and no salt corn and Bob Evans mashed sweet potatoes.

Have made this a few times now and we like it a lot-you can add other things you may have on hand like peas or carrots, etc. It looks pretty too!
