This potato dish is perfect with prime rib and many other entrees. Make it ahead and have it ready to pop into the oven for the party. The topping of cornflake crumbs and Parmesan cheese adds crunch.

Parmesan PointersWhen a recipe calls for shredded Parmesan cheese, use the cheese found in bags in the grocery store dairy section. Shredded Parmesan is often used in salads or soups where the shreds make a pretty garnish. If grated Parmesan is called for, use the finely grated cheese sold in containers with shaker/pourer tops. This type works well in lasagna and casseroles. (You can substitute either shredded or grated Parmesan in equal proportions in your favorite recipes.) If you decide to buy a chunk of Parmesan cheese and grate your own, be sure to use the finest section on your grating tool. You can also use a blender or food processor. Simply cut the cheese into 1-inch cubes and process 1 cup of cubes at a time on high until finely grated.

I made this last Christmas , and my family totally enjoyed it. I have picky eaters, and they all loved it. It was very easy to put together. Will make it again this Christmas.

Very delicious & easy to make! I added 2 cans of soup instead of 1 & i added extra cheese & i used seasoned bread crumbs mixed with butter & parmesan cheese for the topping. Next time i will try the cornflake topping & also try different soup.

I recommend double the cornflake topping. I made this for a football party and everyone loved it. This recipe will be used again.

Super easy, super quick. I added diced onion. And I'd add more topping next time - it is delicious!
