Garlic Mashed Red Potatoes Recipe
  • Prep/Total Time: 30 min.
  • Yield: 6 Servings

Ingredients

  • 8 medium red potatoes, quartered
  • 3 garlic cloves, peeled
  • 2 tablespoons butter
  • 1/2 cup fat-free milk, warmed
  • 1/2 teaspoon salt
  • 1/4 cup grated Parmesan cheese

Directions

  • Place potatoes and garlic in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until the potatoes are very tender. Drain well. Add the butter, milk and salt; mash. Stir in Parmesan cheese. Yield: 6 servings.

Nutritional Facts 1 cup equals 190 calories, 5 g fat (3 g saturated fat), 14 mg cholesterol, 275 mg sodium, 36 g carbohydrate, 4 g fiber, 8 g protein. Diabetic Exchanges: 2 starch, 1/2 fat.

These were wonderful! Just like at a restaurant. I used shredded Parmesan cheese and added a bit of cream and garlic powder too. This will be my new staple for garlic mashed potatoes! Served these with baked salmon, and steamed carrots and beans.

These are excellent mashed potatoes! I make them often and I always add extra garlic. You can never have too much garlic!

this is a family favorite, made it many times, I added one clove of garlic to each potato used, and added 1/2& 1/2 in place of the milk. wonderful recipe! nice & creamy and delish!

These were good. Next time I will probably peel the potatoes because our little kids did not like the skins in there. I made these with BBQ Round Steak.

Great recipe. If you are a garlic-lover, an extra clove or two couldn't hurt! I substituted fat-free half-and-half for milk for a little extra creaminess. Yum!!
