Easy Yeast Rolls Recipe
  • Prep: 45 min. + rising Bake: 15 min. + cooling
  • Yield: 48 Servings

Ingredients

  • 2 packages (1/4 ounce each) active dry yeast
  • 2 cups warm water (110° to 115°)
  • 1/2 cup sugar
  • 1 egg
  • 1/4 cup canola oil
  • 2 teaspoons salt
  • 6 to 6-1/2 cups all-purpose flour

Directions

  • In a large bowl, dissolve yeast in warm water. Add the sugar, egg, oil, salt and 4 cups flour. Beat until smooth. Stir in enough remaining flour to form a firm dough.
  • Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.
  • Punch dough down; turn onto a lightly floured surface. Divide into four portions. Shape each portion into 12 balls. To form knots, roll each ball into an 8-in. rope; tie into a knot. Tuck ends under. Place rolls 2 in. apart on greased baking sheets. Cover and let rise until doubled, about 30 minutes.
  • Bake at 350° for 15-20 minutes or until golden brown. Remove from pans to wire racks to cool. Yield: 4 dozen.

Nutritional Facts 1 roll equals 78 calories, 1 g fat (trace saturated fat), 4 mg cholesterol, 100 mg sodium, 14 g carbohydrate, trace fiber, 2 g protein. Diabetic Exchange: 1 starch.

I made these rolls in my bread maker and they turned out perfect. My husband loved them and said they tasted just like the ones his mother made. His mother was a wonderful cook, so that's quite a compliment! I just made them as ordinary rolls, didn't do the knots. Try these, you won't be disappointed.

Very, very good!!! My husband said they were the best rolls he's ever had. I used 75% whole wheat (hard white), and added a 1/4 cup of gluten to the dough.

I decided to make these rolls Thanksgiving morning. The dough was very easy to work with, and the rolls baked up light and airy. They were a hit at the table, and the recipe is now going to be the one I reach for every time I need rolls.
