Stuffing-Coated Chicken

I found this recipe in an old church cookbook, and it quickly became a favorite. I've used the microwaves at work to reheat left over for lunch. When the aroma of garlic and Parmesan cheese grabs the attention of coworkers, they all ask for the recipe. -Patricia Inman Litchfield, Minnesota

  • 1-1/2 cups stuffing mix, finely crushed
  • 2 tablespoons grated Parmesan cheese
  • 1/4 cup butter, melted
  • 1 garlic clove, minced
  • 5 boneless skinless chicken breast halves (6 ounces each)


  • In a shallow dish, combine the stuffing crumbs and Parmesan cheese. In another shallow dish, combine butter and garlic. Dip chicken in butter mixture, then coat with stuffing mixture. Place in a greased 13x9-in. baking dish.
  • Sprinkle with remaining stuffing mixture and drizzle with remaining butter mixture. Bake, uncovered, at 350° for 40-45 minutes or until a thermometer reads 170°.

    Quick and easy! I used boxed stuffing in Cornbread flavor for my chicken breasts. Next time I'll try Chicken flavor and try an egg/milk dip so it's more moist. And I'll add some spices to bump of the flavor a bit.So I just made this again, its DE-lish!!! I made an egg and milk wash and dipped the chicken in it, then into the Chicken stuffing mix. I buttered the bottom of the baking dish heavily. Wow! really great, tasty and moist. I'll be using this recipe often.

    Awesome recipe! Because there's only two of us, I generally buy large breasts and quarter them, which is what I did for this meal, so my chicken pieces were not as big as the recipe calls for. Like other reviewers have mentioned, they were done to perfection at 30 minutes. Otherwise, I followed the recipe as written. The result is fantastic. Tastes like you spent a lot of time on it, and only you need to know that it's done in less than an hour! Highly recommended!

    Absolutely delicious. Too easy to be so delicious. I used some turkey stuffing I already had and it was so good. We will be having this again. I highly recommend this recipe as a Volunteer Field Editor.

    What a brilliant idea for oven baked chicken! I'm making it tomorrow, but I already gave it 5 *s because it looks & sounds very delicious, and it's also very easy to prepare. I can't wait to serve this lovely chicken dish to my hungry crew!

    Loved this recipe! So easy, yet so flavorful. I did put extra garlic because we love garlic. My 5 year old said " This is very good, Mommy!" The 2 year old ate it up, and the 3 1/2 year ( who doesn't even like chicken unless it's nuggets) told me to make it again. This gem is getting archived!
