Ingredients

  • 1 tablespoon chili powder
  • 1 tablespoon brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking cocoa
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 6 bone-in chicken breast halves (8 ounces each )
  • CILANTRO LIME BUTTER:
  • 1/3 cup butter, melted
  • 1/4 cup minced fresh cilantro
  • 2 tablespoons finely chopped red onion
  • 1 tablespoon lime juice
  • 1 serrano pepper, finely chopped
  • 1/8 teaspoon pepper

Directions

  1. In a small bowl, combine the first 8 ingredients. Brush over chicken.
  2. Place chicken skin side down on grill rack. Grill, covered, over indirect medium heat for 15 minutes. Turn; grill 20-25 minutes longer or until a thermometer reads 165°.
  3. Meanwhile, in a small bowl, combine the cilantro lime butter ingredients. Drizzle over chicken before serving.
