Peanut Butter Popcorn Bars

  • 10 cups popped popcorn
  • 1/2 cup sugar
  • 1/2 cup light corn syrup
  • 1/2 cup creamy peanut butter
  • 1/2 teaspoon vanilla extract


  • Place popcorn in a large bowl; set aside. In a saucepan over medium heat, bring sugar and corn syrup to a boil, stirring constantly. Boil for 1 minute. Remove from the heat.
  • Stir in peanut butter and vanilla; mix well. Pour over popcorn and stir until well coated. Press into a buttered 13x9-in. pan. Cool slightly before cutting.

      Despite the yummy idea of pairing peanut butter with popcorn, it just doesn't work. Super hard to cut into "bars"; not enough peanut butter flavour (considering it's the first item in the title); and they're too hard to really enjoy (it is popcorn after all - should be hard but "poppy").

      We just didn't go for these. The flavor was okay. It's just that they were very chewy, when you expect a popcorn bar to be more ... snappy I guess.
