When we have overnight guests, I like to prepare things ahead of time so we can enjoy the company. It often gets crazy when everyone first wakes up, and I like to have food available whenever people are ready to eat. I devised this slow-cooker breakfast recipe when I was feeding 22 people at a destination wedding. —Donna Gribbins, Shelbyville, Kentucky

Ingredients

  • 1 package (28 ounces) frozen O'Brien potatoes, thawed
  • 1 pound bacon strips, cooked and crumbled
  • 2 cups shredded Swiss cheese
  • 12 large eggs
  • 2 cups 2% milk
  • 1 teaspoon seasoned salt
  • 1 teaspoon pepper
  • Minced chives, optional

Directions

  1. In a greased 4- or 5-qt. slow cooker, layer potatoes, bacon and cheese. In a large bowl, whisk eggs, milk, seasoned salt and pepper; pour over top. Cook, covered, on low 4-5 hours or until eggs are set. Turn off slow cooker. Remove crock insert to a wire rack; let stand, uncovered, 30 minutes before serving. Garnish with minced chives, if desired.
