Ingredients

  • 1 cup mashed ripe bananas
  • 1/2 cup sugar
  • 1/2 cup soy milk
  • 1/4 cup canola oil
  • 1-3/4 cups gluten-free oat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • TOPPING:
  • 1/2 cup gluten-free old-fashioned oats
  • 6 tablespoons gluten-free oat flour
  • 1/3 cup packed brown sugar
  • 3 tablespoons buttery spread
  • 1/2 teaspoon ground cinnamon

Directions

  1. In a large bowl, beat the bananas, sugar, soy milk and oil until well blended. Combine the oat flour, baking powder, baking soda, cinnamon and nutmeg; gradually beat into banana mixture until blended. Stir in the vanilla.
  2. Transfer to an 11-in. x 7-in. baking dish coated with cooking spray. Combine topping ingredients; sprinkle over top. Bake at 375° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 15 minutes before serving.
