We love Girl Scout cookies, especially Samoas, but you can only buy those once a year. I started tweaking a tried-and-true no-bake cookie recipe and wound up with this Samoa taste-alike. It's a great recipe to make with kids! —Donna Gribbins, Shelbyville, Kentucky

Ingredients

  • 1 package (11 ounces) vanilla wafers, finely crushed
  • 1 package (7 ounces) sweetened shredded coconut, toasted
  • 1 can (13.4 ounces) dulce de leche
  • 1 can (14 ounces) sweetened condensed milk
  • 2 cups milk chocolate chips
  • 2 cups semisweet chocolate chips
  • 2 tablespoons shortening

Directions

  1. In a large bowl, combine the first 4 ingredients (mixture will be thick and sticky). Roll mixture into 1-in. balls. Place on parchment-lined baking sheets. Freeze until firm, 30-45 minutes.
  2. Combine chocolate chips and shortening in a microwave-safe bowl. In a microwave, melt chocolate mixture; stir until smooth. Dip cookies in chocolate; allow excess to drip off. Return to parchment-lined baking sheets. Let stand until set. Store in the refrigerator.
