Ingredients

  • 1 slice hearty bread, toasted
  • 1 teaspoon extra virgin olive oil
  • 2 ounces burrata cheese (about 1/4 cup)
  • 1/8 teaspoon sea salt
  • Dash freshly ground pepper

Directions

  1. Spread toast with olive oil. Spread burrata over toast. Sprinkle with salt and pepper. If desired, drizzle with additional olive oil.
  2. Strawberry Basil Burrata Toast : Top burrata with 2 sliced fresh strawberries. Drizzle with 1 teaspoon balsamic glaze. Sprinkle with chopped fresh basil, salt and pepper.
  3. Roasted Cherry Tomato Burrata Toast: Toss 1/2 cup cherry tomatoes with 1/2 teaspoon olive oil. Place on a rimmed baking sheet. Roast at 400° until tomatoes begin to burst, about 10 minutes. Spread tomatoes over burrata; sprinkle with salt and pepper.
  4. Avocado Burrata Toast: Top burrata with 1/4 medium ripe sliced avocado. Drizzle with additional 1 teaspoon olive oil; sprinkle with salt and pepper.
  5. Hot Honey Lemon Burrata Toast: Drizzle burrata with 2 teaspoons hot honey. Sprinkle with 1/2 teaspoon grated lemon zest, salt and pepper.
  6. Apricot Almond Burrata Toast: Top burrata with 2 teaspoons apricot preserves. Sprinkle with 2 teaspoons toasted sliced almonds, salt and pepper.
