You only need to use a little bit of oil, rosemary, salt and pepper to season these air-fryer red potatoes. They’re a healthier version of deep-fried french fries, yet a little less robust than air-fryer baked potatoes. And you can serve them with just about anything (or just enjoy as an anytime-snack!).

Ingredients for Air-Fryer Potatoes
- Potatoes: Of the many types of potatoes you can make in an air fryer, we use unpeeled small red potatoes for a few reasons. They’re low in starch and high in moisture, so they develop a great texture when air-fried or roasted. Plus, the skin is thin so you don’t have to peel them.
- Olive oil: Olive oil sticks the herbs and seasonings to the potatoes. It also helps the potatoes crisp up in the air fryer.
- Rosemary: Use fresh or dried rosemary. Like most fresh to dried herb conversions, you’ll need a larger amount of fresh than dried.
- Garlic: A little fresh garlic goes a long way for deepening flavor in the potatoes.
- Salt and pepper: You don’t need a lot of salt and pepper, but don’t omit them, since they’re needed to enhance the other ingredients.
Directions
Step 1: Prepare the potatoes
Preheat the air fryer to 400°F. In a bowl, drizzle the potatoes with olive oil, then sprinkle them with the rosemary, garlic, salt and pepper. Gently toss everything together to evenly coat the potatoes with the oil and seasonings.
Step 2: Cook the potatoes
Arrange the potatoes evenly on an ungreased tray in the air-fryer basket. Cook until the potatoes are golden brown and tender, 10 to 12 minutes, stirring the potatoes once.
Recipe Variations
- Roast the potatoes in the oven: If you don’t have an air fryer, you can easily make red roasted potatoes in an oven.
- Use different seasonings: For a twist, instead of rosemary, use a Cajun seasoning or Old Bay seasoning. Or make your own Mexican-inspired seasoning blend with cumin, chili powder, onion powder and garlic powder. Go Greek-inspired with oregano, basil and dill. Or try our all-purpose all-around seasoning blend or any store-bought spice blends to amp up the flavor.
